Evaluation of the Phytochemicals, Nutritional and Anti-nutritional Compositions of Fresh, Sprouted and Toasted Citrullus lanatus (Watermelon) Seed Extracts

The current study evaluated the Phytochemicals Nutritional and Anti-nutritional Compositions of Fresh, Sprouted Toasted Citrullus lanatus (Watermelon) Seed extracts. phytochemicals, proximate, amino acids, microminerals antinutrients compositions were determined following standard laboratory procedures in autoanalizer machines. Data analyzed using one-way ANOVA followed by LSD Duncan test for levels significance. Results revealed presence Tannins, Saponins, Flavonoids, Alkaloids, Cardiac glycosides, Terpenoids three samples but anthroquinones was absent sprouted toasted watermelon seeds. Saponins (2.15 ± 0.07 mg/100 g), Tannins (40.63 0.13 g) Cyanogenic glycosides (3.55 0.35 g). There no significant (P > 0.05) difference concentrations phytochemicals all except cyanogenic which significantly < higher fresh sample. Percentage protein (24.87 0.48) sample, ash (%) (2.63 0.11) lower sprouted, fibre (20.64 0.23) moisture (2.88 0.19) carbohydrates (9.81 1.27) sprouted. obtained Amino acids mineral analyses showed Phytates (0.31 0.01%) sample while oxalates (0.85 fresh, seeds may possess nutritional health benefit virtue their richness phytochmicals, however safety is not guaranteed due to its high concentration anti-nutrients.
